Tea Matcha drunk at Traditional Japanese Tea Ceremonies is obtained from tea tree leaves grown in shade.
Matcha, the reason that tea leaves (read as Spades tea) are left in the shade for 15 days before being collected is to enable the plant to secrete more chlorophyll. Chlorophyll both gives tea its bright green color and allows it to have a strong taste.
Matcha tea is usually obtained from the leaves of tea of the genus Gyokuro. After collecting the tea leaves, they are exposed to steam, dried, undergo a process in which the stem, veins and other excess are separated. As a result of the procedure, “Tencha” is obtained, in which only 10% of the first collected product remains. Tencha is then powdered very slowly, usually with a hand grinder. It takes about 3 hours to get Matcha tea by grinding 100 grams of Tencha. Faster procedures create an undesirable burn taste in tea.
Matcha (Maccha) tea is used directly as well as in many drinks and desserts. These include matcha latte, matcha cafe au lait, matcha milk shake, matcha cake, matcha cookies.
It is known that the highest quality Matcha tea is grown and processed in Japan. As Chado Tea, we have been selling Matcha teas grown and processed exclusively in Japan since 2007.
The other matcha tea sold under the Chado brand is Koicha matcha.
